Biography
I studied many biological regulatory functions of Foodstaffs. Particularly, I researched blood pressure reducing peptides(angiotensin-I converting enzyme inhibitor), and anti-diabetic foods derived from fermented soybean (alpha-glucosidase inhibitor), anti-obesity food derived from fermented tea “puarh-tea”(lipase inhibitor). ACE inhibitory peptides and alpha-glucosidase inhibitory food were approved “Food for Specified Health Uses” by Japanese government.
